Many women are allergic to the gluten (protein) contained in wheat, rye and oats and aren’t aware of this sensitivity. If you don’t tolerate gluten-containing grains, you may have “false fat”. This is extra weight due to bloating and inflammation.
Gluten also causes digestive symptoms including cramping, gas, diarrhea or constipation and worsens irritable bowel syndrome. It also aggravates PMS, depression, fibromyalgia, autoimmune diseases, sinusitis, bronchitis and middle ear infection in many women and even in susceptible children.
Luckily, there are many great substitutions for gluten containing grains that you can use in your diet. My favorite substitutes are brown rice, millet, quinoa, wild rice, amaranth and buckwheat. These grains are available as flours for baking, ready made breads, bagels, cereals, waffles, cookies, muffins, cakes and other desserts.
