Mango Strawberry Popsicles

popsicle_139017593I love mango popsicles! They are a wonderful treat- creamy, sweet and delicious.

Mangos also have many health benefits including being rich in vitamin C and fiber! Vitamin C helps to supports healthy immunity and vision and having extra fiber in your diet can assist with healthy weight loss.

Note: All popsicle molds are slightly different sizes. Please adjust the ingredients for the size of your popsicle molds.

Mango Strawberry Popsicles

3 cups mango, fresh or frozen- if frozen defrost first

1/2 cup apple juice (use more if needed)

1 cup strawberries, chopped

1-2 tablespoons fresh lime juice

1 1/2 tablespoons agave nectar

In a blender or food processor puree the mango, lime juice and agave nectar together and slowly add in the apple juice. Pour mixture into a bowl and let freeze for 30 minutes to an hour to become slushy. Mix in the strawberry pieces and then spoon into the popsicle molds. Freeze until solid.
