Shrimp and Mango Salad

photo25I adore this salad! It is so delicious and also full of healthy ingredients. The mango, avocado and red bell pepper are great sources of beta-carotene. Having sufficient beta-carotene in your diet is essential for female health.

Beta-carotene also protects you from benign breast disease, heavy menstrual bleeding, and skin aging. It supports vaginal and bladder health and reduces your risk of many types of cancer, including cervical, lung, and bladder cancer.

Beta-carotene helps to protect the cardiovascular system from heart attacks and lowers the risk of strokes. It is essential for healthy immune function, resistance to infection, and healthy vision.

These vegetables are also excellent sources of soluble fiber. Soluble fiber attracts water and forms a gel that slows down digestion and makes you feel full. This is beneficial if you are trying to lose weight since it helps to prevent overeating and food cravings. It also helps to stabilize the blood sugar level.

Like olive oil, avocados are a great source of heart healthy monounsaturated oils. These beneficial oils help to lower your total cholesterol level while creating a healthier balance. They lower LDL, or bad, cholesterol while raising your HDL, or good cholesterol.

Avocados are also high in potassium and low in salt which helps to lower blood pressure and reduce your risk of heart attacks and strokes. Shrimp and Mango Salad
Serves 4

1 pound of shrimp, cooked with shells removed

1 large mango, peeled and cut into chunks

1 large avocado, diced in 3/4 inch cubes

1/2 bell pepper, thinly sliced

1/4 small red onion, minced

1/4 cup cilantro

Vinaigrette dressing to taste

Combine all ingredients in a large bowel. Then add vinaigrette dressing to taste. Toss well and serve in 4 smaller bowls.
